Tainá Guedes, Peter Wrapson, Mark André Pennock, Bon Bock Culinary and Contemporary Arts Residency, and Café Bravo at KW Institute for Contemporary Art, are pleased to invite to an adventurous dinner, the first episode of Tainá’s art project around “SEEDS”
SEEDS: The Beginning
At the beginning we were all one. I was you, you were me, she was he, and we coexisted without any borders. We called you and nature just one name.
At the beginning the world was small, it fit inside one big blue ball.
At the beginning, there was water, there was tree, there was it, there was you, there was me.
At the beginning all infinite potentialities were inside a seed
A seed can become stalk, can become leaf, can become fruit, can become flower, can become home, can become you, can become weed
A seed that is here, was there and it was everywhere
A seed that we serve here, will become us, and we will become seeds
The seed that we plant here, embraces the idea of inter-being, by preserving our seeds, preserving ourselves and our future
Menu by Peter Wrapson, a vegetable gardener with an exceptional taste in food. Our dinner will include various seeds that have been saved every year for the past 15 years. Peter currently works at Cambridge University Botanic Garden and also runs gardens for two organic kitchens. Previous to which he was the head gardener for Jamie Oliver, growing organic fruit and vegetables and writing about them. He has a particular fondness for heirloom varieties and unusual crops.
Roast carrot, feta and mint with caraway seeds
Beetroot with garlic yoghurt dressing
Freekeh with cavolo nero, barberries and pistachios
Lentil dal with spinach
Couscous with wild garlic and preserved lemons
Bolivian beans and fenugreek seeds in tomato sauce
Squash frittata with new season asparagus
Green salad
Sprouted seeds
All served with nice flatbread
As for the dessert, Tainá would be creating a dish that captures the moment that the winter ends, in a melting frozen ice, with sleeping seeds inside
Spring awakes: made out of lemonade, elderberry flower sirup, green tea, with sweet azuki beans inside, served on a white and green cookie pastry.
