‘Nomadic Chef’ Santiago Lastra, will bring a series of special dinners to Borough Market this Autumn, ahead of the opening of his debut restaurant Kol, in early 2020.
Throughout October and November, Santiago will be taking over the open kitchen and dining space at Mimo cookery school in Borough Market. Diners will be immersed in the unique and vibrant world of Kol and Santiago’s Mexican influenced dishes, authentic techniques and unprecedented flavours that have placed him and his food firmly on the world culinary map.
Originally from Mexico City, Santiago made his name following stints at restaurants including Mugartiz in San Sebastian and the Nordic Food Lab in Copenhagen, before he was headhunted to project manage the Noma Mexico pop-up in Tulum in 2017, alongside Rene Redzepi.
The dinners follow several months of intensive research and development within Santiago’s designated test kitchen in West London. For the past year, he has divided his time between honing his dishes in the test kitchen and travelling the breadth of the British Isles, seeking out the finest produce available to him. With less than six months until the opening of Kol, Santiago is eager to share the fruits of his labour and a preview of what diners can expect at the permanent restaurant next year.
Reflective of the offering being curated for Kol, wine served on the evening will be sourced from biodynamic winemakers from central and Eastern Europe, including Slovakian vineyard Slobodne - who will be making the Kol house blend of white and red wines.
Alongside the wine list, we will have a carefully curated mezcal menu featuring Mexico's best agave producers.
