In a 300 year old cottage in the Kentish woods, just 1 hour from central London, Sæl Projects by Tobyn Excell hosts SixSeats, an intimate rural dining experience connecting people with landscape.
Once a month we open up the cottage to 6 guests to join us for dinner at our kitchen table for an evening of natural wines, genuine old-school hospitality, and creative food from the wildlife in the marshes, woods and coastline surrounding us, where we rediscover forgotten ingredients and unearth buried methods.
The menu is an expression of the landscape, and evolves right up to the last moment as the season changes every day. Here's a sample from our last SixSeats dinner:

For each edition of SixSeats, we join forces with a guest sommelier to celebrate shared passions for terroir and low intervention principles through curating a flight of natural wines. The aim is to expose our guests to diverse flavours of authenticity from like-minded people, championing their native landscapes in your glass.
For our sixth SixSeats, we are reuniting with our old friends at Basket Press Wines. Jiri and Zainab will be bringing more of their incredible native wines of Moravia in Czech Republic. The winemakers they support produce artisanal, authentic wines which are terroir focused, follow low intervention principles, and truly let the fruit and vineyard speak for itself. Jiri is also a master of mixology, so expect some stellar decoctions from our wild larder.
