Coming from Denmark, the USA, Hungary, Germany and Italy with some of their signature sausages in their luggage, bringing them all to one table. The Nose-to-tail principles have been forgotten for a very long time. Nowadays, this approach of using and appreciating whole animals is getting new and positive attention due to it's sustainability aspect and a more conscious meat consumption — while many traditional butchers never forget how to make them.
