What are the 100 most important dishes in history? No, seriously, I’m asking. For the next edition of MAD’s book series, Dispatches, we’re creating a history of cuisine as told through some of the most influential and inspirational dishes ever created. This is where you come in. We want to hear from the MAD community about the dishes that are meaningful to you. What spurs your own creativity? What do you admire? What are the dishes your peers and mentors point to most often? What are the dishes that define your region or culture? The entire culinary spectrum is fair game, from classical and traditional preparations, to the highest pinnacles of restaurant cooking.
