There are currently many organisations that state that their mission is to provide various groups with access to “good food” who otherwise might not have the means to access it themselves. The real question is, what does “good food" mean? Does it mean that it is seasonal, local, prepared with a certain level of complexity or sustainably sourced? Shouldn’t “good food” be determined by what is best for a particular person in a particular situation regardless of the aforementioned factors? Together we will try to best start to define what “good food” really means and how we can promote that definition to the various organisations around the world that are trying to help those in need.

Dan Giusti Founder, Brigaid, New London Guisti, former head chef of noma, founded Brigaid in 2016 to improve the quality of school food. Professional chefs and school staff work together to promote food education and serve kids delicious meals made from scratch at a dozen public schools in New York City and New London, Connecticut.
