Celebrate and taste Christmas the Filipino way in this four-course menu on the 14th of December 2019.

Starter - SCALLOP + ENSALADA
Pan-seared scallops in a bed of fresh mango salad with tropical dressing.
First main - BAGNET + PAKBET
Both from the northern regions of the Philippines, this deep-fried crispy pork belly dish is paired with some mixed vegetables steamed in fermented anchovies and shrimp sauce.
Second main - TINAPA + LAING
Usually smoked, this delicately prepared mackerel is paired with shredded spinach cooked in thick coconut milk spiced with labuyo chili, lemongrass, garlic, shallots, ginger, and shrimp paste.
Dessert - UBE + YEMA
Puffed purple-colored rice pastry with banana custard and toffee sauce topped with praline meringue and peanut powder.
