A RARE AND UNIQUE CULINARY JOURNEY AS GENEVA-BASED CHEF WALTER EL NAGAR HEADLINES TEST KITCHEN’S NEXT POP-UP
Geneva-based, self-proclaimed “Mad Chef” Walter el Nagar has disrupted dining and restaurants around the world with his unique concepts that take meals far beyond an eating experience. He has taken his popup dinner experience to Los Angeles at Barbershop Ristorante, Barcelona, Ibiza, Moscow, Tulum in Mexico and Singapore, and on 25 – 28 March, he’s bringing it to our doorsteps in Test Kitchen, Hong Kong.

Having run Geneva restaurants including Fiskebar in the city’s acclaimed Ritz Carlton Hotel de La Paix, as well as opening the popular ramen joint called Susuru, his most recent venture was another celebrated spot in Geneva called Le Cinquième Jour. It was unique as diners ate four days a week, while on the fifth day the same menu was served for free to less fortunate, underprivileged people in his community.
His techniques there, of pushing the boundaries of preservation, fermentation and other conservation techniques, are also in evidence in his hugely enticing Hong Kong menu. Home cultured butter with his ciabatta, an almond cheese with eggplant and a stunning black vinegar with mandarin – served with pork and prawn – are just some examples diners will be able to enjoy.

A native of Milan, Italy, he is internationally-recognized and acclaimed for his dynamic and evolving menus. Walter El Nagar has deliberately chosen the life of a “culinary nomad” with a series of pop-up restaurants that have been presented in locations including Los Angeles at Barbershop Ristorante, Barcelona, Ibiza, Moscow, Tulum in Mexico and Singapore.
